iRacing probably has the best one because at least it forces the correct type of shifting for each car and can simulate clutchless shifting and dogboxes and such, but it's still far from perfect. After that, rFactor 2 maybe. 1. trigger.
The game’s subscription-based structure often makes it difficult to find competitions to enter for the F1 genre. However, there is a reasonable selection of open-wheel cars to try, making way for plenty of realistic formula racing when you get the chance. Overall, iRacing is perhaps the most realistic F1 simulator in terms of the physics. PROS:

This is why ACC is supposedly the best sim for GT3 because that's what they're modeling their physics system on is only GT3 and GT4. If they started doing open wheel racing their braking system wouldn't make sense anymore for those cars. As far as I know ACC traction control is also more realistic to GT3 cars too.
2. Mario kart. 1. Pepe24K. Honestly no game could simulate the clutch well, but you could still improve your use of it in games like BeamNG and surprisingly ETS2 (at least it worked for me l, it helped me improve releasing the clutch slowly and smoothly), these games helped me quite a bit with the clutch.
Now I am back to sim racing, installed ac and was expecting huge improvement in physics but was little disappointed. Looks like it needs a lot of tunning and finding right car & setup. Also u need to have much more aggressive driving style, like in pro competition cars (fd), lots of power (+500), lots of grip.
